We have a product that listed four color options, with one of them as "coming soon" and set to null. Now, we are offering the previously unavailable color. However, after changing the option to no longer be null, the Update & Configure Options is still not listing it.

Is there a reason for this? How do we go about correcting it?

A null choice cannot be converted to a valid choice because no variant product exists for it. You would need to remove the null choice and add a new choice. I'm assuming that you're not using inventory tracking as this would be a way to prevent an out-of-stock item from being ordered.
