I have a type of product that requires the user to select a "style" - which I am handling via PRODUCT CHOICES > Product Modifier. This sets the price and SHOULD then restrict the color choices the customer can make. Is there any straightforward way to have the first, required selection determine what appears in the second dropdown?

Sounds like nested choice lists:

Pick size L, and get color chart "A" to select color.
Pick size XL, and get color chart "B" to select from a different set of colors.

I'd like to see this too, but it's likely so rare.... I've never seen a cart do this, but I'll bet it's possible.
