Is there a way to control the order that products show up in categories? By default is it based off creation date?

Yes, you can sort the products manually in any order you wish from the edit category page->Select Items Screen

I have as many as 100 products in a category. Is there a plan to add the option to sort products through a drop down menu?

I think that would be a "no".

the ordering of the products for even 20 products is annoying. Yes, you can manually control this but why would you want to do that instead of an alpha sort or SKU ordering? It makes no sense.

I think you nearly answer your own question.

Why would I want to sequence the product or category display order?
Sorting by name or by SKU will not display the products in the desired order.

An easy example - take a collection of shirts and display all of the same style in sequence. sorting by name or sku may not return this.

After being faced with this problem several times, I modifed bvc2004 to support sequencing so I could determine the product sort order. There is a need for it - regardless of size of product collection.
